My rotis are denser and less puffy than with my usual atta.

Whole, stone-ground multigrain flour behaves differently from commercial atta, which is often finer milled and sometimes has added gluten for softness. Let the dough rest 15 to 20 minutes, use slightly more water than usual, and knead a little longer. The texture will improve noticeably.

Why does this not stay fresh as long as packaged atta?

Stone grinding keeps the wheat germ and bran in the flour, and the germ contains natural oils that eventually go rancid. Commercial atta often removes or heat-treats the germ to extend shelf life, losing nutrition in the process. Store ours airtight, refrigerate in summer, and buy the pack size you will finish.

There are dark flecks in the flour and the colour varies between packs.

The flecks are bran, and they are supposed to be there. Colour varies by harvest and by the proportion of each grain in a given batch. Perfectly uniform flour usually indicates blending across many sources to hit a fixed appearance.

I found insects in my flour.

We do not fumigate our grain, which is exactly what most customers ask of us, and it does mean whole grains are more vulnerable to pests once a pack is opened in a warm kitchen. Store airtight and refrigerate in summer. If you find pests in an unopened pack, that is on us. Send a photo and your batch number and we will replace it.

Which grains are in it, and who is it suited to?

A blend of whole grains and millets, stone ground with bran and germ intact, so it carries more fibre and minerals than refined or roller-milled atta. It is not gluten free, since it contains wheat. If you need a gluten-free option, look at our jowar or ragi flour instead.
