Why is this jar paler (or more golden) than my last one?
Colour comes from beta-carotene in what the cows eat. After monsoon, when green fodder is plentiful, the ghee turns deeper gold. In drier months it comes out paler and creamier. Same cows, same bilona process, different season. Industrial ghee looks identical year-round because the colour is standardised. Ours is not.
My ghee is grainy this time. Last time it was smooth.
That grain is called danedar and it is a marker of the bilona method, not a fault. Whether granules form depends on how slowly the ghee cooled after clarifying, which changes with the weather on the day it was made. Both textures are the same ghee.
It has gone completely liquid. Is that a problem?
No. Ghee softens above roughly 28 degrees and turns fully liquid above 32 to 35. In an Indian summer kitchen, liquid ghee is normal and it firms up again in cooler months. Do not refrigerate it. Cold storage makes it rock hard and unevenly textured, and it is not needed.
How should I store it, and how long does it keep?
Room temperature, away from direct sunlight, lid closed. Always use a completely dry spoon. Moisture is the only real enemy, because water introduced into the jar is what causes spoilage. Stored this way it keeps for its full stated shelf life without refrigeration.
